Lunner


At the beginning of any school year schedules get hectic and it’s no different around here.  The boys are involved in their individual routines, mostly grabbing dinner while out or eating at work.  Rick works late at least twice a week.  That leaves me here looking for something light to eat around late afternoon/early evening time.



If a late breakfast/early lunch is brunch, what is a late lunch/early dinner? Lunner?   Is that a word?  An acronym, maybe?

Apparently both a word and an acronym.


 And really, last night, lunner was a fitting end to a cr*ppy (cruddy) day.  It started at midnight when Older Son finally got around to changing his clothes and decided to use the laundry shute in my room to send down his dirty clothes.  I had been asleep about an hour, am an extremely light sleeper and now I was up.  Great. 


 Of course I forgot to set the timer on the coffee maker (I never forget), and ended up having to stand there and watch each and every drip… drip… drip… drip.  Kill me now. 


I fought the kids out of the house at 7:30am, watched them go and realized I had forgotten to tell them to grab something in the school office for me (what do you expect with no coffee in me).  Text them?  Nope, cell was apparently turned on in my purse all night long and out of batteries.  Run after them up the street in my nightgown?  Nope, don’t have any make-up on yet. 


 Did the laundry and forgot to put in the sweatshirt I promised Jason I’d wash today (had my coffee by now so no excuses).  Took a shower and forgot that I had put my towel down the laundry shute and hadn’t pulled out another.  And so my day went, on and on (and on and on and on).


At about 5:00pm I’m alone.  Whatever I had to do has miraculously been (minimally) accomplished (or put on the calendar for another day), it’s ab0ut midnight according to my body clock and I’m not about to cook a whole meal for myself.   Lately on these nights when everyone’s gone I’ve been having some of my summer favorites: salads and vegetable side dishes that I make when ingredients are fresh.  They’re not really a whole meal for a family of hungry men, but easily more than enough for me.

Curried Chicken Salad Wrap

Printable Recipe

Ingredients:
3 boneless skinless chicken breasts, roasted and cut in chunks or shredded
3/4 cup Mayonnaise
3 Tbsp White wine
3 – 4 tsp Curry powder
2 Tbsp Apricot jam
Sprouts (I don’t know, about a handful)
2 green onions, chopped
Roasted red peppers, chopped (whatever amount you want)
6 dried Apricots, chopped (I’ve also used cranraisins in this)
Opt: slivered almonds or chopped cashews
Soft tortillas

Directions:
*Put chicken, sprouts, green onions, roasted red peppers, and apricots or cranraisins in a bowl.
*Mix together Mayonnaise, white wine, curry powder and apricot jam. 
*Add mayo mixture to chicken mixture, a little at a time.  You may not need it all and you don’t want it too wet.
*Refrigerate at least 4 hours to let the flavors marry (I refrigerate overnight).
*If using nuts, add just as serving to maintain their crunch.
*Put some of the salad into the center of a soft tortilla.  Roll like an enchilada.

  3. Man, I'm sorry that I'm just NOW reading this!! I hope your day today is going better. Curse the coffee timer! As soon as I read the post, I thought of our family's naming of the meal- Linner. No acronym (unless you count the 'L' as Lazy mom)..Sometimes, when I'm feeling extra tired, we have ONE meal. We call it Ber-linner. (Get it?) If it's been an especially trying day....Let's just say "THANK GOODNESS" for microwave popcorn. Sending you smiles and appreciation for all of the Birthday love -shel

  4. Funny enough your day basically sounds like mine (without time to stop for coffee and ended up having a migrane by the end of it). Unfortunately I am also a teacher so apart from getting the kids ready for school, I also had to get myself ready for school!!! Definitely not fun!!!

  13. I love love curry. Apricot? I'll have to test that combo. I love making a big batch of curry chicken and eating it for lunch. I'm all for the tortillas since they have less carbs than two slices of bread. Yay. came over from serendipity and spice and can't wait to see more of what you cook up
