I meant to say welcome to my monthly poetry post. Still cringing? Me too. But here's the thing, I've been writing this blog for years now, we're friends, we're in this thing for the long haul, you and I, so ungrit your teeth, unclench your jaw, let your shoulders down from ear level and lets get
Luck, you need to change.
Though you've got a wide range,
lately you've just been strange.
What's next? I come down with mange?
Brand new luggage is broken.
New cell phone is soakin'.
The dishwasher's smokin'.
Swear words have been spoken.
Leprechaun, pour me a stout,
seems your good luck I doubt.
I've had a permanent pout,
recipes take 3 tries to come out.
Now I'm knocking on wood,
searching clover in my hood,
crossing fingers like I should,
under no ladders I've stood.
I can wish on a star,
hang horseshoes in my car,
follow rainbows afar,
put found pennies in a jar.
Yet . . .
With the bad I've been stuck.
Get me out of this muck.
I don't want to say f*ck.
But, luck, right now . . .
. . . you suck.

Pistachio Soda Bread

Ingredients (makes one medium sized loaf):
2 cups flour (plus more to flour counter)
3 TBSP sugar
3/4 tsp baking soda
1 tsp salt
4 oz unsalted pistachios, shelled
4 TBSP butter, separated
1 cup buttermilk
Directions:
*Place the shelled pistachios in a food processor and pulse a few times. You want chunks, not crumbs.
*Spray a baking sheet with non-stick spray. Flour a section of your counter. Melt 3 TBSP of the butter.
*Mix the flour, sugar, baking soda, salt and pistachios. Stir in the melted butter and buttermilk just until the dough comes together.
*Turn the dough onto the floured area of your counter, flour your hands and knead just 5 or 6 times. Form a circle and place onto the prepared baking sheet. With a knife, carve an "X" into the top of the loaf and allow to rest for 30 minutes.
*While the bread rests, preheat the oven to 375 degrees and melt the other 1 TBSP butter.
*Brush the melted butter onto the loaf, place in the oven and bake for 35 to 40 minutes until brown.
WOW! Absolutely LOVED IT! I think this is your best poem to date. Great flow and rhyme (I'm a sucker for rhyme, obviously ;o) ) Hopefully your luck will change soon. :)

ReplyDeleteI can't believe you made soda bread! I totally made it up for my guest post! Right now I have a yeast dough that is raising. It contains yogurt, white vinegar, honey and malt. I saw a picture. It looked amazing.
We love Soda Bread on St. Patrick's Day, but this Pistachio Soda Bread will be my go-to from now on. Let me know how your bread comes out today, it sounds delish.

It was actually leaking, but that didn't rhyme so I took artistic license.
