This month's subject is Winter Blues,
I bet you can guess why.
So bear with me as once again
poets everywhere I'll horrify.
Winter Blues
Obsessed with thinking,
of a cruise . . . oh, and booze?
Face it, my friend,
you've got winter blues.
Screaming at the TV,
when weather man's on the news?
Face it, my friend,
you've got winter blues.
Fall on the ice so often,
you've got a permanent bruise?
Face it, my friend,
you've got winter blues.
Too cold to leave the bed,
hit the button for snooze?
Face it, my friend,
you've got winter blues.
Take refuge in sweets,
gained weight you'll never lose?
Face it, my friend,
you've got winter blues.
Peanut Brickle Pie Bars
Temps up to the 30s,
elicit aaahs and ooohs?
Face it, my friend,
you've got winter blues.
Begging Mother Nature,
"Enough, I've paid my dues"?
Face it, my friend,
you've got winter blues.
"That's it, moving south,"
while home listings you peruse?
Face it, my friend,
you've got winter blues.
If I sound pessimistic,
you'll have to excuse,
me, because my friend,
I too've got winter blues.

Peanut Brickle Pie Bars

Ingredients:
1 pie crust1/2 cup corn syrup
1/2 stick butter, softened
1/4 cup brown sugar
1/4 cup heavy cream
1 tsp vanilla
1 cup roasted unsalted or lightly salted peanuts
1 1/2 cup of milk chocolate and peanut butter baking chips
Directions:
*Preheat oven to 350 degrees. Grease and flour a 9 X 13 pan.
*Roll out your pie crust to about 10 X 14 inches. Fit into and a little up the sides of your pan. Prick bottom and sides with a fork.
*Bake for 10 minutes. Take out of oven and set aside but leave the oven on.
*Microwave corn syrup, butter, brown sugar, heavy cream and vanilla for 1 1/2 minutes, stir and then microwave another 2 minutes. Mix in the nuts. Pour into the crust.
*Bake for 20 minutes, remove from oven, leaving the oven on, and sprinkle with the baking chips.
*Return to the oven for one minute, until the baking chips start to melt.
*Remove from oven and gently spread the melted chocolate chips so they coat the top.
*Cool to room temperature before cutting.

DeleteWe have the rained in blues. That’s all it’s done but it’s not snow.
ReplyDeleteOh how I wish I could eat one or three of those bars. Have a couple and think about me.
We are actually expecting snow Friday night. Not looking forward to it.
