At the beginning of any school year schedules get hectic and it’s no different around here. The boys are involved in their individual routines, mostly grabbing dinner while out or eating at work. Rick works late at least twice a week. That leaves me here looking for something light to eat around late afternoon/early evening time.
If a late breakfast/early lunch is brunch, what is a late lunch/early dinner? Lunner? Is that a word? An acronym, maybe?

I fought the kids out of the house at 7:30am, watched them go and realized I had forgotten to tell them to grab something in the school office for me (what do you expect with no coffee in me). Text them? Nope, cell was apparently turned on in my purse all night long and out of batteries. Run after them up the street in my nightgown? Nope, don’t have any make-up on yet.
At about 5:00pm I’m alone. Whatever I had to do has miraculously been (minimally) accomplished (or put on the calendar for another day), it’s ab0ut midnight according to my body clock and I’m not about to cook a whole meal for myself. Lately on these nights when everyone’s gone I’ve been having some of my summer favorites: salads and vegetable side dishes that I make when ingredients are fresh. They’re not really a whole meal for a family of hungry men, but easily more than enough for me.
Cheddar Bread and fresh fruit

Printable Recipe
Ingredients:
3 boneless skinless chicken breasts, roasted and cut in chunks or shredded
Ingredients:
3 boneless skinless chicken breasts, roasted and cut in chunks or shredded
3/4 cup Mayonnaise
3 Tbsp White wine
3 – 4 tsp Curry powder
2 Tbsp Apricot jam
Sprouts (I don’t know, about a handful)
2 green onions, chopped
Roasted red peppers, chopped (whatever amount you want)
6 dried Apricots, chopped (I’ve also used cranraisins in this)
Opt: slivered almonds or chopped cashews
Soft tortillas
Directions:
*Put chicken, sprouts, green onions, roasted red peppers, and apricots or cranraisins in a bowl.
*Put chicken, sprouts, green onions, roasted red peppers, and apricots or cranraisins in a bowl.
*Mix together Mayonnaise, white wine, curry powder and apricot jam.
*Add mayo mixture to chicken mixture, a little at a time. You may not need it all and you don’t want it too wet.
*Refrigerate at least 4 hours to let the flavors marry (I refrigerate overnight).
*If using nuts, add just as serving to maintain their crunch.
*Put some of the salad into the center of a soft tortilla. Roll like an enchilada.
HUGS HUGS HUGS for your rough day!!!!!!!
ReplyDeleteThanks, it's that old "when it rains, it pours" thing!
DeleteI hope/wish you have less rough days and more lunners (the second acronym!)
ReplyDeleteThanks, Vicky, I'm learning to like the quiet time, and the "not cooking a whole meal" thing isn't so bad either.
DeleteMan, I'm sorry that I'm just NOW reading this!! I hope your day today is going better. Curse the coffee timer! As soon as I read the post, I thought of our family's naming of the meal- Linner. No acronym (unless you count the 'L' as Lazy mom)..Sometimes, when I'm feeling extra tired, we have ONE meal. We call it Ber-linner. (Get it?) If it's been an especially trying day....Let's just say "THANK GOODNESS" for microwave popcorn. Sending you smiles and appreciation for all of the Birthday love -shel
ReplyDeleteLOL, LOL, and LOL. Oh, and thanks for the hint: microwave popcorn IS a meal if 2 Moms say it is (and it looks like we do)!
DeleteFunny enough your day basically sounds like mine (without time to stop for coffee and ended up having a migrane by the end of it). Unfortunately I am also a teacher so apart from getting the kids ready for school, I also had to get myself ready for school!!! Definitely not fun!!!
ReplyDeleteI am following you now and hope you can follow back.

So sorry to hear that your day was even in the same zip code as mine. I'll stop by your blog, maybe it'll make me feel better!
Deletehahaha love the acronyms! And this sounds yummy! Thanks so much for stopping by my blog!

Hope you're laughing WITH and not AT...
Deletedefinitely with :)
DeleteSorry about your rough day! BUT, that right up there looks and sounds DElicious! I love curry and the mix all the ingredients you listed is making my mouth water. The bread and salad, too. Oh, yum! Hope you at least enjoyed that! :-)
ReplyDeleteThank you, I did. I'm starting to LOOK FORWARD TO these nights when I don't have to cook and can have something light for dinner!
DeleteOh, and I always call it "lupper" since I refer to "dinner" as "supper". Lupper...works, too right? Lol
ReplyDeleteSo funny, everyone is starting to tell me all the different words they use for this "meal". Maybe that's why it doesn't have a name, everyone uses a different one!
DeleteHi Karen! first off, love your blog title! My daughter made something similar to this just this week. I'll be bookmarking this one to try.
ReplyDeleteJoAnn
My son picked the blog title when my first choice was taken. Now I'm glad my first choice was taken, I love it!
DeleteI hate when I have days like that. Hope you had a great day today! The wrap sounds fantastic.
ReplyDeleteI'll tell you one thing, days like that sure make me appreciate days like today!
DeleteI had never heard of lunner before but you've sold it well here! I know what you mean when you would be happy to just eat a little but the males in the house demand a big feed. My other half is just the same.

I'm learning to enjoy the opportunity to have a light meal and some peace and quiet.
DeleteThose look delicious and easy enough that even I could make them, lol!
ReplyDeleteYou've seen my food pictures, believe me if I can do it you can!
DeleteLove the word - I think I'll have to use both the word and the meal more often =) We are avid weekend lunnerers (now is THAT a word?!?) - ha ha!
ReplyDeleteIt's a word in my book (even if I have to add it to the dictionary myself).
DeleteI love love curry. Apricot? I'll have to test that combo. I love making a big batch of curry chicken and eating it for lunch. I'm all for the tortillas since they have less carbs than two slices of bread. Yay. came over from serendipity and spice and can't wait to see more of what you cook up
ReplyDeleteIf you don't love apricots, try it with cranraisins, I've done that too. Enjoy!
DeleteWhat a delicious dish!! I love using curry. Thanks so much for linking up to Tasty Thursdays on The Mandatory Mooch!! I hope you will link up again. The party will be live tonight. www.mandatorymooch.blogspot.com
ReplyDeleteThanks, Nichi
I'll be there!
DeleteYum! Your Lunner looks fabulous! Wish I could have joined you! But then you would have been... let's see...
