Pies for Pi Day. Genius!

Pi Day, where have you been all my life? I had never heard of it before. Well, I mean, I was aware of all of the components: I knew that pi is 3.14 . . . and I knew that 3/14 was a yearly date on the calendar, and I certainly knew that any and every reason to eat pie is a good reason. What I didn't know is that some brilliant person put all of that together and started the yearly Pi Day celebration.

I was first enlightened when my kids were in elementary school. The was a celebration planned and any parents who could were asked to send in a pie. The results would be a mile long (OK, I may be exaggerating a little, but it was a sight to see) table full of an epic pie smorgasbord.

Sign me up. The boys picked their favorite pie for me to send in, and I made another for our family for dessert that night.

It doesn't matter if you're a Pi Day veteran, or a Pi Day newbie, if you have favorite pies, or are looking for some new ideas, whatever the situation, I am SO here for you.

Whether you prefer fruit, chocolate, nuts, ice cream, alcohol infused, or lead free, baked or no baked, I've got options for you. Today I'm sharing 17 of our favorite pi(e) recipes, hoping some of them become your new favorites too.

Oh, and why 17? Did you figure it out? 3 + 14 for 3/14, of course.

Tart (or semi-tart) apples offset the creamy caramel candies melted into this crumble. Baked with, of course, a crunchy brown sugar topping.

The filling in this single crust pie includes Nutella, crispy chocolate cereal, and butterfingers bits. A chocolate lovers' dream.

This adults only version of pecan pie is spiced and spiked.

This ice cream pie features raspberry flavors along with the crunch of chocolate cookies. Easy to assemble, perfect for making ahead.

The flavor of a peppermint patty in pie form. The crust can be made a day in advance, and the filling is no bake.

This beautiful ice cream pie pairs strawberry and speculoos (cookie Butter).


As delicious as it is pretty, this pumpkin filling is mixed with a hint of cream cheese, and baked in a circle of cinnamon French toast sticks.

This pie is a dressed up option to brownie squares. A walnut crust and brownie filling with bits of butterfingers.

This pie features yur choice of berries, baked into a pie crust and topped with a white chocolate chip crumble.

A walnut crust has a creamy orange pineapple center and is garnished with toasted coconut.

Almonds, cranraisins, and white chocolate chips provide the flavor in this easy to make dessert.

A classic pie with a fruity spin. So easy, the filling is mixed up in just one bowl, then pour into the crust and bake.

Mint chocolate mix-ins are folded into ice cream and frozen in a brownie crust.

This unique pie features raspberry and Prosecco, a perfect pairing.

Grab Some Nuts

When I was invited to participate in a group post in honor of “Grab Some Nuts” Day, I was a bit confused. I didn’t want to seem stupid, but there are just so many kinds of nuts, which ones were we discussing?

The male nether-regions type?
Well, that would be a tricky kinda post. Don’t think I’d be including many visual aids without the police coming to my door. And then I suppose I’d have to go put a bra on before they lead me away in handcuffs.

The wackadoodle type?
Well, I’ve written a few posts where I definitely flew my nutty wackadoodle flag. But if I keep doing that the men in the white coats may cone get me and lock me in a rubber room. Do you think they make you wear bras in those rubber rooms?

The kind you build with?
All I know about these kinds of nuts is that they’re supposed to go with bolts. Pretty short post, but then anyone who knows me is aware of the fact that I’m a walking DIY disaster. Any time I buy something with “some assembly required” I end up with leftover nuts and no one in my house dares touch the finished product. Whimps!

The food?
Ah yes, the food. That’s what they meant. Phew! I’m almost sure I can grab those nuts without changing my attire.

That settled, I had to decide what to make. Usually I start with the recipe and then name it. This time I was working backwards and starting with a name. A Grab Some Nuts recipe had to be called “Great Balls of Fire”, right? Or I could make a round cookie or cake ball, use blue food coloring and call them “Blue Balls”.

Turns out I was having so much fun naming the recipe I almost forgot to actually make something. Not good when you join in a group post. Turns out they want you to . . . you know . . . have a recipe to publish.

I didn’t even end up using any of those fun names, d@mn it. But that’s OK because this recipe was a huge hit and I’d much prefer a hit in my nuts than a catchy name. Wouldn’t you?

Pistachio Cream Cheese French Toast

Printable Recipe 
 
Ingredients:
1 cup whipped cream cheese
4 TBSP powdered sugar
3/4 tsp vanilla
3 oz finely chopped, salted pistachios
Loaf of Italian bread
 
3 eggs
1/3 cup hazelnut creamer
¾ tsp cinnamon
8 oz finely chopped unsalted pistachios
 
2 TBSP butter
OPT: serve with Maple Syrup
 
Directions:
*Mix together the whipped cream cheese, powdered sugar, vanilla and 3 oz pistachios.
*Slice six approximately 1 ½ inch slices of Italian bread. Make a pocket in the center of each slice, starting from the center of the top and slicing not quite down to the bottom. Don’t slice all the way to the sides or through the bottom.
*Using a knife, spread about 1/6th of the cream cheese mixture into each of the pockets, then press to close.
*Whisk together the eggs, creamer and cinnamon. Place the remaining finely chopped pistachios onto a piece of wax paper or into a dish.
*Heat 1 TBSP butter in a large frying pan over medium heat until hot.
*Dip each side of 3 of the bread slices into the egg mixture, then press into the pistachios. Place into the frying pan and immediately turn the heat down a notch. Fry until brown, gently flip over and fry the other side until brown. Repeat with the other pat of butter and the other 3 slices of bread.
*OPT: serve with Maple Syrup
