Acts of Kindness Series

This post has a story:

In the middle of July I received a phone call at my home. A woman asked if I had a son and named my younger son. As my heart stuck in my throat thinking something had happened to him, she explained why she was calling. She’d found his wallet in the parking lot of a fast food restaurant. She not only took the time to turn it in to the manager, but also somehow found my phone number. She wanted to let me know that the money, credit cards and license were still in it when she found it and to let me know where it was.

I’m happy to say that my son figured out what had happened and walked into the restaurant within minutes of our hanging up. He got the chance to look her in the eye and thank her. I think he said “thank you for finding my wallet and not taking my money”, but that’s just my son, and another whole story. I asked him what she said. He said that she told him to “go call your Mother”.

I wrote about this kindness on the part of a stranger on my FB wall and a wonderful thing happened. People started answering my post with their own stories. And that’s when it hit me; I need to share these. All of these.

So here is the first group, the stories are told in their own words:


~It was Mother’s Day approximately 10 years ago, my mother was in a nursing home with Alzheimer’s. My father and I went to visit her and took her to the local Denny’s for lunch. With her having Alzheimer’s we never knew what was going to come out of her mouth. She could on occasion say some inappropriate things. The restaurant was crowded due to it being Mother’s Day so we were waiting in line to be seated. In line in front of us was a couple who were bikers. They had on their motorcycle jackets and were holding their helmets and for some reason my mom was attracted to the man. She was talking and flirting with him a little bit and they were amused by this. We explained that she had Alzheimer’s and that we were there just taking her out for lunch. They were seated, we were seated and that was the end of that. At the end of our meal we were waiting for the check and our waitress came over and told us that the couple had paid for our lunch. That was the first time anything like this ever happened to me and it still chokes me up when I think about it. Such a simple gesture really made a big impression on us.

~One afternoon my husband met up with me and my two children to do some shopping and eating in downtown Ames. At one point my phone rang, I talked to the person for quite a while before hanging up. What I did not notice was that several of my cards had fallen out of my purse. I did not realize this until much later when I couldn’t find them. I was in a state of panic for quite a while until we were able to find out that one of the Subway employees was trying to track me down using information from the bank. I got my stuff back. And while I was somewhat embarrassed about the situation it was very obvious that they did everything they could.

Leftover Night Steak Sandwich

~Back in the late winter of 1987 I was pregnant with our first baby, due in April. My husband was in the Air Force, part of an amazing group that worked and flew on the E4-B 747, better known as the Doomsday Plane. I was headed to a pregnancy appointment, one of the only ones my hubs had to miss, when my front passenger tire blew on my Camaro. Now my hubs is missing this appointment because President Reagan was on the move and when the President moved, my husband moved. So here I was, 7 months pregnant, the size of a small wildebeest, staring at a flat tire, late winter in Omaha, Nebraska. I stood there trying to figure out the dynamics of this mess when up walked a Staff Sergeant in his DRESS BLUES. Now, if you’re not Military, you have no idea how much these uniforms cost, ((A HELL OF A LOT))! And while most AD wear fatigues, this man was in a AFSC where dress blues were the daily uniform. You can imagine my shock when that man took off his jacket, handed it to me and commenced to changing my tire. I cried, out of desperation, frustration and thankfulness. I offered to pay over and over and he refused over and over, simply asking that when I had the chance, to pay it forward. He told me how his wife had sat on the side of the road, broke down for nearly 4 hours while car after car passed her by including a number of police cars. I have never forgotten that man or his request. I have stopped to help many people over the past 26 years and I always think of that day when I do.

~I'm a big fan of paying it forward. I think it's important to do to maintain a karmic balance. it's unfortunate that there aren't enough people that believe this. I've had the chance to pay it forward many times and I've had someone pay it forward to me. It leaves me with a warm, fuzzy feeling.
I had the chance to pay it forward once and it started a trickle effect. I was in the Wal-Mart bathroom and a lady left her purse. I took it to the manager and asked him to locate the lady who'd left it. About 15 minutes or so later, I felt a tap on my shoulder. It was the woman who owned the purse. She handed me $20 and thanked me for being honest. I tried to refuse it but she insisted. So I took it and thanked her. When I'd got to the store, I'd noticed a young man outside in the parking lot with a sign asking for food. I took that $20 and bought some non-perishables that he could use, as well as some bottled water and took it to him. He thanked me profusely, genuinely shocked that someone would be so kind. I told him no thanks was needed and that, when he could, repay the kindness.
I didn't do it for the thanks. I didn't do it for the reward. I did it because it was the right thing to do.

Leftover Night Steak Sandwiches

NOTE: When I grill steaks for the family, I always slice and freeze the leftovers. Once I have enough I make these “Leftover Night” Steak Sandwiches.
 
Ingredients:
4 rolls
2 TBSP vegetable oil
1 onion, sliced
1 red or green pepper, sliced
½ # mushrooms, sliced
Garlic powder
Pepper
Italian Seasoning
2 cups of cooked, cooled and thinly sliced steak (I use Rib Eye or NY Strips)
2 TBSP Steak sauce
2 TBSP grated parmesan
4 slices smoked provolone cheese
 
Directions:
*Slice and toast the rolls.
*Preheat oven to 200 degrees.
*Heat the vegetable oil in a pan on medium heat. Add the onion, peppers and mushrooms. Sprinkle with garlic powder, pepper and Italian seasoning to taste.
*Sautee vegetables until they’re soft.
*Add the steak and Steak Sauce. Cook and stir until the meat is hot. Sprinkle with parmesan.
*Put a slice of Provolone in each roll. Fill each roll with ¼ of the meat and vegetable mixture. Wrap each sandwich in tin foil and put into the oven for 10 minutes.

My subject is: If you could choose your menu for one entire day (breakfast, lunch, dinner, snacks, dessert) and not have any added calories or allergies . . . what would be on your menu? It was submitted by Dinosaur Superhero Mommy.
Here goes:

Maine Lobster with drawn butter. Breakfast, lunch and dinner. For a snack I’ll have a Lobster Roll, grilled, light on the mayo and no celery. And for dessert, cheesecake (bet you thought I was going to say Lobster). I’m sure no one can guess I’m a displaced New Englander, right?

OK, in lieu of eating lobster non-stop, let’s try this:

Breakfast
Who: Me. Just me.
What: Apple Puff Pancake with a rosette of whipped butter already melting into it and warm Maple Syrup.
When: About 20 minutes after I wake up and about 18 minutes after coffee was magically delivered to that exact same place.
Where: In bed, of course.
Why: Because I really miss these delicious puffs, and although I make them myself (rarely), nothing tastes like the original.
How: Not my problem.

Apple Puff Pancake


Lunch
Who: Me, Magnum PI, Steve McGarrett, Jack Shephard
What: Whatever fish is freshest, Macadamia-crusted. And a Mai Tai (make sure you use my recipe, it’s here: My Mai Tai).
When: As soon as I come in off of the beach.
Where: In a hammock on a lanai overlooking the beach in Hawaii.
Why: Beach, lanai, fresh seafood . . . why not?
How: Private jet?

Snack
Who: Me, Degas, Jules Verne and Coco Chanel
What: Baguette, crusty and still warm from the oven, Camembert and a Chateauneuf-du-Pape.
When: Sometime mid-afternoon, I’m not picky.
Where: Jardin de Tuileries.
Why: Are you kidding?
How: Probably something that involves a time machine.


Dinner
Who: Me, George Clooney, Sting
What: Antipasto, Risotto, and a lovely Prosecco, of course.
When: Whatever time of day George and Sting are available. I’m a very accommodating guest.
Where: George’s villa in Lake Como, Northern Italy. Unless Sting wants to host at his place in Tuscany. I’ll let the guys work out the location.
Why: Great food AND eye-candy.
How: Any way I can.

Dessert
Who: Me. Just me.
What: Anything chocolate, warm and gooey.
When: When everything’s done for the day and the house is quiet. You know, that moment at the end of a day when you take a deep breath in and let it out slowly.
Where: Back home. In bed.
Why: It’s been a long day of eating and traveling and scintillating conversation. How better to end it than with chocolate?
How: Carefully, luxuriously, and with a whole pile of napkins.

Apple Puff Pancake

Ingredients:
2 Apples, peeled cored and sliced
1/3 stick butter plus 2 pats of butter
2 tsp lemon juice
2 TBSP brown sugar
½ tsp cinnamon plus cinnamon for sprinkling
3 eggs
¾ cup flour
¾ cup milk
 
Directions:
*Preheat oven to 450 degrees. Spray a 10 inch pie plate with non-stick spray.
* Sautee apples in 1/3 stick butter until soft. Add lemon juice, brown sugar and ½ tsp cinnamon. Mix and cook for 1 more minute.
* Wisk the eggs, flour and milk together until smooth.
*Put 2 pats of butter into the pie plate and put in the oven. Watch it carefully, allow it to melt but don’t let it get brown.
*Carefully remove the pie plate and swirl the butter around the bottom. Immediately add the pancake mixture. Spoon the apple mixture into the center. Sprinkle lightly with cinnamon.
*Put into the oven. Do not open the oven again until the pancake is completely finished.
*Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake another 10 minutes.
*Remove from oven and serve.

Five Things

My friend Sarah, who writes at The Sadder But Wiser Girl tagged me in this “Five Things” game that’s chasing bloggers around the playground. So I’m “it” and before I can tag someone else, I have to come up with 5 responses in each of 7 categories. I think there should only be five categories, but you’ll notice nobody asked me.

Before I proceed, let’s just get the legalities out of the way:

Five things I have a passion for:
*Baking. But not the cleaning up afterwards part. If anyone knows how to reconcile this issue, please let me know. It’s possible that a reward will be offered.
*The Red Sox. Unconditional love. I got this from my Grandpa and grew up waiting for my turn at his Box Seats.
*Ballet. I love(d) to do it (poorly) and I love to watch it, which I do quite well. My Mom nurtured this love so I’ve personally seen on the stage: the Bolshoi, Nureyev, and Baryshnikov.
*My kids. Yes, I complain about them. OK, a lot. But just like any other Mom I adore them, plain and simple.
*Music. In the car. Loud. Bet you thought I was gonna say “writing”.
. . . and the ocean, and skiing, and lobster and cocktail hour and Sudoku and reading and Secret Subject Swaps and . . . that’s about 5, right?

Five things I’d like to do before I die:
*Sleep. And I mean like all night long. Until the morning.
*Eat a dessert without someone sticking their fork onto my plate.

*Don’t eat that until I’ve taken  a picture of it.

*I need a drink.
*Love you like crazy.

Five books I’ve read lately:
I love my Kindly. And I read a lot. I mostly read to be entertained so my choices tend to be light reading. I especially love mysteries and do have favorite authors whose books I devour as soon as I can get my hands on them.

Being such a voracious reader, I download Kindle books from the library. But my library card just expired. No warning, nothing. Just went to get a book online and “that card has expired”. And you can’t renew online or over the phone. I have to drive down there. So in answer to what books I’ve read lately? None. Thank you very much Public Library. If it wasn’t for the blogs I read I’d probably be shaking and jonesing by now.

Five favorite movies:
*Dirty Dancing. I love dance. Especially ballet, but all dance. And, of course, “nobody puts Baby in a corner”.
*Wizard of Oz. Because I’m often feeling like “we’re not in Kansas anymore”.
*Rain Man. I can’t remember anything. He remembers everything. A match made in heaven.
*The video of my older son’s birth. Because seeing it is so much better than feeling it.
*I’d like to say the video of my younger son’s birth, but SOMEONE taped over it. And it wasn’t me.

Five places I’d love to travel:
I’ve traveled quite a bit, in the US and internationally so I have no regrets, but here’s my list:
*The Greek Isles. I bet it’s just spectacular.
*The Pyramids. The history is fascinating.
*I’ve already been to Hong Kong but that was when it was under British rule. Now that it’s Chinese, I’d like to see how it’s different (or the same).
*I’ve also been to Israel. But it’s a work in progress, probably more than most countries so I’d love to go back.
* Back in time to when I knew everything . . . something . . . anything.

Mint Mousse Brownie Cups

Ingredients, Brownie Cups:
4 ounces unsweetened chocolate
1 stick margarine
1 stick butter
3/4 tsp vanilla
1 3/4 cups sugar
3 eggs
1 cup flour

Ingredients, Mint Mousse:
1 cups plus 1/2 cup heavy cream
1/2 cup mint chocolate chips
1/2 cup semisweet chocolate chips
2 TBSP sugar
1/4 tsp mint extract
green food coloring

Directions:
*Preheat oven to 350 degrees. Grease 24 muffin tins.
*In a microwave, melt together the unsweetened chocolate, margarine and butter for one minute, stir, then continue in 10 second intervals until completely smooth.
*Stir in the vanilla. Once incorporated, stir in the sugar, then the eggs and last the flour.
*Pour into the muffin tins and bake for 10 to 13 minutes. The outside should be set. The center won't be fully set but should not be wet. 
*Remove from the oven and let cool for 15 minutes.
*Gently tamp down and up sides to form cups with the bottom of a wooden spoon. If any of the center is still runny, scoop it out. Run knife carefully around edges. NOTE: If you do this step too soon the bottom will be too wet.
*Cool completely then remove from muffin tins.
*In a microwave safe bowl, mix 1/2 cup cream and both chocolate chips. Microwave for 45 seconds, stir and continue in 10 second intervals until it's smooth. Cool to room temperature.
*In a separate bowl, beat 1 cup of cream with the sugar and the mint extract until stiff peaks form. Move about 1/4 cup of whipped cram to a separate bowl and add a little green food coloring.
*Gently fold the remaining whipped cream into the chocolate mixture. Pipe or spoon into the brownie cups. Top with a dollop of the green whipped cream.
*Store in the refrigerator.
