Use Your Words: Cocktails, Hawks, and Swimming in a Tub

It's no secret that I'm a summer person. And although it officially starts with Memorial Day, for me the proof that it's truly here comes in the days following Independence Day, while I'm clearing the last of the fireworks from my lawn so we don't run over them with the lawnmower and just getting the last of the cordite smell out of my nose.

I have to admit, and I have many times, that being a summer girl is way more of a challenge having grown up on the East Coast by oceans and now living in the land locked Midwest. I grew up driving an hour or so on weekends to beaches on Cape Cod or Plum Island. Less often I could be found by a lake, but cold water to swim in was a must.

When I moved to the Midwest no one had to tell me that other than vacations that required 2 planes, I was out of luck in the ocean realm. But when I called the parks department my first week here to ask which of these many lakes have beaches on them and they laughed, well, that was a low blow.

When the boys were younger we belonged to a pool. It was our only option, so we took it. Now it's not worth joining considering the boys are so busy with their own schedules. Especially since one's a Head Lifeguard at a city pool. But not belonging is making me desperate. Plunging many rungs down the ladder from the ocean life but unwilling to give up completely, it seems I've been reduced to embarrassing myself and the boys with my new plan, sitting in an Intex Swim Center Family Lounge Pool on the back lawn.

But not so fast. Apparently it's out of stock. If I want this baby, I've got to join the queue. Now I've hit rock bottom. I may have to lower the tub 2 floors down onto the lawn and hoist the damn thing back up at bath time. Yeah, desperate has new meaning.

Even the inability to submerse myself has not  changed the fact that I love summer. Ah, wearing all white, flip flops and tank tops, being able to buy fresh plump strawberries to create new recipes:

And evenings, when it starts to cool down just a bit, there's nothing like sitting on the back deck, drinking a favorite summer cocktail I developed a few years ago, my Strawberries and Cream Cocktail:

And watching our friends the hawks, who build their nests and raise their young in the woods behind our house and even get comfortable enough with us to come visit.

Strawberry Topped Brownie Bites

Ingredients:
1 stick butter
1/2 stick margarine
4 oz unsweetened chocolate
3/4 tsp vanilla
1 3/4 cups sugar
1/2 tsp salt
3 eggs, room temperature
1 1/4 cups flour

18 strawberries

1/2 cup powdered sugar
1 TBSP raspberry flavored liqueur
2 tsp strawberry extract

Directions:
*Preheat oven to 350 degrees. Spray 36 mini muffin cups with nonstick spray.
*In a microwave safe bowl, melt the butter, margarine and chocolate until completely smooth. Mix in the vanilla, then sugar and salt. Mix in the eggs and finally the flour.
*Drop the batter by heaping TBSP into the prepared muffin cups. Bake for 15 minutes or until the top springs back to the touch.
*While the brownie bites are baking wash, hull and half the strawberries.
*Once the brownie bites are done, remove from oven and immediately press a strawberry half into the top of each one. Run a knife gently around just the top of each bite and then allow to set for 5 to 10 minutes.
*Once they have set, gently run the knife around the bites and carefully remove from the tins. Allow to cool completely.
*Whisk together the powdered sugar, raspberry liqueur and strawberry extract. Drizzle over the brownie bites. 
*Store, covered, in the refrigerator and bring to room temperature for serving.

Summer Sun Sizzle

In last month's poetry challenge, I wrote a poem speaking directly to the sun called I'm Begging You, Sun.We'd been having an abundantly wet and stormy spring, and that's an understatement. So I begged. Begged the sun to come out and play. Or come out and let me play.

There's more at stake here than just wanting my yard to dry out. PurDude is the Head Lifeguard and Learn To Swim Coordinator at a public pool. He needs every penny he can make as it's the bulk of what he'll have for spending money this coming school year. And he doesn't get paid for the days they have to close the pool. So my begging the sun to come out was not just for me.

But make no mistake, I'm a summer girl, always has been.

I made it through a long cold winter, I suffered through a soggy spring. And now hot steamy summer is here. How do I feel about it?

Summer Sun Sizzle

Sprinklers hiss to life at the break of day,
mosquitos buzz at dusk, smack them away.

Gardens and flower pots, nature's rainbow,
plants lean to the sun to bloom and grow. 

Get out the hose, fill that big water gun,
nothing like summer's unique brand of fun.

Pops and bangs, colors light up the sky,
cordite odor that just won't die.

Cookouts and parties and dinner on the grill,
Fresh fruits and garden veggies fit the bill.

Grilled Dry-Rubbed Pork Tenderloin

Ingredients:
1 1/2 to 2# pork tenderloin
1/3 cup brown sugar
1 TBSP salt 
1 TBSP paprika
2 tsp coarsely ground pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1/2 tsp red pepper flakes
1/2 tsp cayenne
1/2 tsp chili powder
1/2 tsp instant coffee powder

OPT: Serve with my homemade Devil's Applesauce

Directions:
*Rinse and pat dry the pork tenderloin.
*Mix together the rest of the ingredients.
*Place the tenderloin onto a long piece of plastic wrap. Sprinkle the rub over the meat and gently massage in. Turn the tenderloin so all sides are covered with the rub.
*Roll the tenderloin tightly into the plastic wrap and refrigerate for at least 4 hours and up to a day.
*Spray your cold grill with nonstick spray. Heat the grill to medium.
*Remove the tenderloin from the plastic wrap and place onto the grill. 
*Cook for 35 to 40 minutes (we prefer pork to be cooked through, adjust cooking time if you prefer it more rare), turning every 10 minutes. If the outside is getting too dark, you may need to lower the heat slightly.
*Remove from grill, tent with foil and allow to rest for 5 to 10 minutes before slicing.
*Serve with homemade Devil's Applesauce.

When I think "chill" especially in July, I think of a few things. The first is floating on a raft in the pool with a Pina Colada in my hand. The second is sitting on the beach with a Pina Colada in my hand. The third is . . . well, you get the point.

The other picture that comes to mind is cookouts at the end of a hot summer day, with the perfect ending, my mom's Lemon Bars. We love Lemon Bars in our house, cookout or not, they've become a summer treat for us. I think it's that lemon is so refreshing in the hot weather. And they go so well with a big glass of icy cold lemonade. So I based these Chewy Orange Pineapple Bars on the classic Lemon Bars. And, the Pina Colada, of course.

I saw no reason to change the crust so for these bars I started with the same shortbread crust as the Lemon Bars and pressed it into my baking dish:

After baking the crust, I knew I wanted the same type of filling as the Lemon Bars but more of the flavors of the Pina Colada. I had orange juice in the fridge so I started there. Since I was using orange juice not pineapple juice, I went with chopped pineapple chunks.

I mixed up the filling, poured it into the crust and topped with some coconut flakes.

Pop in the oven and bake and wow, this looks (and smells) great.

After refrigerating to set, I cut, topped with a little powdered sugar and a final nod to the Pina Colada, a cherry. Delish!

Chewy Orange Pineapple Bars

Ingredients:
1 stick butter, softened
1 stick margarine, softened
2 cups flour
1/2 cup powdered sugar

4 eggs, room temperature
2 cups sugar
1/2 cup orange juice
1/2 tsp pineapple extract
1/2 cup flour
1 tsp baking powder
8 oz pineapple chunks, well drained and coarsely chopped
1 tsp orange zest
1/2 cup coconut flakes

Opt for serving: powdered sugar and cherries

Directions:
*Grease a 9 X 13 glass baking dish. Preheat oven to 350 degrees.
*Carefully cream the butter, margarine, 2 cups flour and powdered sugar.
*Press into and just barely up the sides of the baking dish. Bake for 20 minutes. 
*While the crust is baking, beat the eggs and sugar. Once smooth, beat in the orange juice and pineapple extract. Once incorporated, beat in the flour and baking powder. Fold in the orange zest and pineapple.
*Pour this mixture over the hot crust. Sprinkle with coconut flakes.
*Bake for 30 minutes or until you gently press the center, it feels set, not wet. Remove from oven and cool on the counter for 1/2 hour. Move to refrigerator and cool completely before cutting.
*Opt: When serving, sprinkle with powdered sugar and top with a cherry.
