Yes, I admit it, I do have a secret talent. Here’s the thing about secrets though, once you tell them they’re no longer your secret.

So this post took a lot of soul searching. Do I really want to make my secret known? Put it out there for all the world to see? Once something’s out on the interwebs, after all, good luck getting it back. Ever pull out too much tin foil and try to get it to smoothly re-roll back into the box? That’s sort of how I feel trying to get a secret talent back to being my own secret would be like.

Fortunately it will not be traumatic to my family. They do already know, witnessed it many times. Because although some talents are acquired as we go through life, honed and crafted to reach its highest peak, others we’re born with. Mine? I’ve had it as long as I can remember. And in my family there’s photographic proof of that.

A day at the beach, parties, cookouts, family dinners, whatever the occasion my secret talent is on display for all to see. Then, and forever.

So here it is. The moment of truth. I’m finally going to stand up publicly and admit that I have a secret talent.

I’ve hidden it long enough, spent hours adding sunglasses graphics to my photographs, pretending I’m cool like the celebrities. But as of now those days are over.

I, Karen BakingInATornado, admit that I have a secret talent. All through the years I have been capable of having my eyes closed in every picture ever taken of me. It’s possible no one even knows what color my eyes are.

My husband and I, we are a mixed marriage. Hubs is a mere mortal, does not have this talent.

Although . . . they say the longer a couple is together the more they start to look alike . .

Summer Salad Tostada

Ingredients (serves 4):
2 TBSP red wine vinegar
2 TBSP lime juice
2 TBSP olive oil
Salt and pepper to taste
1/2 tsp sugar
2 TBSP cilantro, chopped
1 jalapeno pepper, seeds removed, finely chopped
1 green onion, chopped
1/2 cup cooked black beans
1/2 cup cooked corn kernels
4 10 inch tortillas
¼ stick butter, melted OPT: can use nonstick spray or olive oil
1 TBSP taco seasoning
 
Salad greens of your choice
Queso Fresco
Black olives, sliced
Tomatoes, chopped
Avocado, chopped or sliced
 
Directions:
*Prepare the salsa at least 2 hours but up to a day ahead of time to let the flavors marry: Stir together the  vinegar, lime juice, olive oil, sugar, salt and pepper. Mix in the cilantro, jalapeno, onion, beans and corn. Refrigerate, stirring now and then.
*Preheat oven to 350 degrees. Using a pastry brush, lightly butter (or olive oil or spray) the tortillas. Place tortillas, butter side down, into an oven safe flat bottomed bowl or lid of a bowl, allowing to curl up the sides just a bit. You can place them on a baking sheet, they’ll just be flat instead of rounded.
*Lightly brush the tops of the tortillas with butter and sprinkle with taco seasoning. Bake for approximately 10 - 12 minutes, watching carefully so they don’t get too brown. Gently remove from bowl and allow to cool.
*When ready to serve, place your greens on the tostadas. Sprinkle with queso fresco, olives, tomatoes and avocado. Top with the salsa.

  16. Ha! My husband has the same talent, but only if he smiles in pictures. The DMV actually asks him not to smile in his picture, so you can see his eyes! Makes him look like a thug. It's pretty awesome. LOL

  17. I can touch my tongue to my nose AND wiggle my ears, but I'm usually eyes wide open for pictures. I guess ya can't have everything!!
