Poetry Monday's once a week.
I bet you know which day.
I don't participate every time,
But today I've come out to play.

My friends assign each week a theme,
A strange celebration, today they chose.
Now it's up to all of us,
to put our thoughts into prose.
 
 
 
 
 
 
 
 
 
The Zucchini Shuffle
 
Turning on the air fryer,
and baking up a storm, 
Hubs came into kitchen,
as the berries started to warm.

Tell me please, my darling,
No zucchini baked in those.
Not that I don't like them, but
full of zucchini from head to toes.  
 
He was right, she knew it,
garden yielded far too many,
cooked and baked them daily,
but they had, well, more than plenty.
 
"No, honey," she told him,
"I've put berries into these.
But I've got a really great idea, 
one that's sure to please."

Blueberry Cream Cheese Biscuits (oven or air fryer)
 
 
 
"Tomorrow night's a holiday,
and we will celebrate.
Sneak zucchini on your neighbor's porch!
We're sharing, it'll be great."

Next evening once the sun went down,
bags in hand they both set out.
Sharing their bounty with neighbors, 
(but to their own benefit, no doubt).
 
Walking home and smiling, 
they knew that they'd done well.
Once they got to their house, though
wide eyed, exclaimed "holy hell!"
 
Right there on their doorstep,
baskets, bags, and tins. 
When it comes to the zucchini shuffle,
seems that no one wins.

Berry Cream Cheese Biscuits (oven or air fryer)

Printable Recipe

Ingredients:
1 can (16.3 oz) biscuits
4 oz cream cheese, softened
2 TBSP speculoos (cookie butter)
1/2 cup berries of your choice
olive oil to spray
 
Directions:
*Divide each biscuit in half by separating off the top half of the layers. Chop any berries larger than blueberries.
*Whisk together the cookie butter and cream cheese. Dollop onto the bottoms of the biscuits. Gently spread around, not quite to the edges. Top with the berries, then add the biscuit tops.
*Preheat the air fryer to 350 degrees.
*For either type of air fryer, spray the basket or shelves with olive oil.
*FOR BASKET AIR FRYERS: depending on the size of your basket, you may need to work in batches. Place the biscuits into the air fryer and spray them lightly with olive oil. Cook for about 8 minutes at 350, check to be sure they're browned on the top and cooked through. Put them back in for another 2 minutes, if necessary.
*FOR SHELF AIR FRYERS: Place the biscuits on the shelves, and spray them lightly with olive oil. Cook for 4 minutes at 350 degrees. Move the shelves around to different placements for even cooking. Cook another 4 minutes.
Check to be sure they're browned on the top and cooked through. Put them back in for another 2 minutes, if necessary.
*FOR OVEN BAKING: Preheat oven to 375 degrees. Lightly grease a baking sheet. Bake the biscuits for about 13 - 15 minutes, until the tops brown and the centers are cooked.

  1. Ah zucchini the difficult veggie. We love to plant it and when it arrives, we're like, now what? Bread, yes. And some veggies. Love your creativity.

  2. I love zucchini, and eat it all year. However, I prefer the smaller ones that don't have fully-developed seeds. Some of the prime season ones are as big as a baseball bat!
