Greetings

I've been working on my bucket list. Well, in an imaginary, blogging kind of way, but whatever. In May I fulfilled my wish to be a news anchor. Today I'm writing greeting cards.

I had to get to this one quickly, before sending cards go the way of the dinosaur. And I really wanted to take a shot at this one. I mean, can you imagine people all over the country sending your words to each other as a way of expressing what they feel? How great is that.

So I'm starting a line of cards. And although I originally thought I was just creating these heartfelt sentiments for here, on second thought (and due to a great part to how long these took me to make) I'm thinking of actually selling them. I mean, I've seen the kind of dreck (that's Yiddish for crap) that people buy online. Why not my cards?

Here's the beginning of my line. Some of these are for mainstream occasions, with these I'll have to compete for market share. But in order to create my own market, some are for . . . more unique situations.

Spinach Rice

Ingredients:
1 package (9 - 10 oz) frozen spinach
1 TBSP butter
1 clove minced garlic
1 1/2 cups vegetable broth
1/2 tsp salt
1/4 tsp pepper
dash cayenne
1 1/2 cups instant rice
1/3 cup shredded parmesan cheese

Directions:
*Defrost the spinach and drain well. Press firmly between towels to be sure it's as well drained as it can be.
*Melt butter in a medium sauce pan over medium heat. Add the garlic and cook and stir for one minute.
*Add the vegetable broth, salt, pepper, cayenne and spinach. Increase heat and bring to a boil. Immediately add the rice, stir, cover and remove from heat.
*Let sit for 5 to 10 minutes until the rice has absorbed all of the liquid. Stir in the parmesan cheese and serve.

  2. The Mom and Jail ones are my favorites but The first birthday one is really cute too and, well I like them! I hope you are working on a menopause card too. I love to mix spinach with rice, it just goes well.

  3. Loved every single one of them. What a lot of work -- and such a great idea. I am sure you will keep us posted when they are for sale. Did you have some good laughs out loud when you came up with the punchlines?
