Greek Pasta Salad

Greek Pasta Salad

Ingredients, pasta salad:
1 # tricolor rotini, cooked al dente and cooled in refrigerator
5 ounces grape tomatoes
½ cucumber, peeled, quartered and sliced
2 green onions, chopped
6 oz olives (black or kalamata), drained
4 oz crumbled feta
Ingredients, dressing:
¾ cup Extra Virgin Olive Oil
¼ cup red wine vinegar
1 TBSP lemon juice
1 tsp dijon mustard
1 tsp crushed garlic
1 ½ tsp oregano
½ tsp salt
¼ tsp pepper
Directions:
*Once the pasta is completely cooled, mix it in a large bowl with the other salad ingredients.
*Wisk the dressing ingredients for at least a minute, pour over salad ingredients and mix.
*Keep refrigerated overnight, stirring every now and then.
Don't mess with Cheerios! I will try and remember this!

Choosing the picture was a little bittersweet, but I did smile a lot as I went through them.

Yeah, as I recall the one driving the train was fine but I probably had to bribe the other to lay on the tracks.

DeleteThis picture pretty much sums up everything we know about raising boys. If I had to submit a picture of my sons, the youngest would be chasing the oldest through the house with a dirty plunger. Or a live cockroach. Boys will be boys

DeleteYour boys were so cute... I don't know what they look like now, so I can't compare, but totally adorable! I have a feeling my brothers would have gladly posed for this picture when they were younger. :)
