Urban Camping: Funny Friday

Today’s post is this month’s Funny Friday, a regular feature published on the last Friday of every month. Funny Friday is a collaborative project. 1. Worker to his boss: Some things are sacred. When it's nap time, it's nap time.

2. Man to himself: Wow this shopping thing is exhausting. Now I know why the wife goes to the gym, to build up her stamina for a day in the stores.

3. Man on cell to his wife: Honey, while you're in the store, want to pick me up some sun screen?

4. Man to his carpool-mates: Hey, you spend time in traffic your way, I'll spend time in traffic my way.

5. Man to wife: I know I promised a peaceful weekend camping, but why pay for a camp site? This spot is free. It's a new thing, I'm starting a trend, I call this Urban Camping.

Strawberry Cream Cheese Filled Peanut Butter Bread

Strawberry Cream Cheese Filled Peanut Butter Bread

Ingredients:
2 cups flour
1/3 cup sugar
1/3 cup brown sugar
1/3 cup mini chocolate chips
1 TBSP baking powder
1 tsp salt
1/2 cup peanut butter
1 1/4 cup milk
1 egg

8 oz cream cheese, room temperature
1/2 cup powdered sugar
1/4 cup seedless strawberry jam
1/2 cup strawberries, hulled and chopped

Directions:
*Preheat oven to 350 degrees. Grease a loaf pan.
*Whisk together the flour, sugar, brown sugar, mini chocolate chips, baking powder and salt.
*In a separate bowl, whisk well the peanut butter, milk and egg.
*Pour the wet ingredients into the dry ingredients and mix just until fully incorporated.
*Beat together the cream cheese, powdered sugar and strawberry jam. Mix in the strawberries.
*Spread half of the peanut butter mixture into the loaf pan. Cover with the cream cheese mixture, then the rest of the peanut butter mixture. 
*Bake for 50 - 55 minutes or until the center springs back to the touch. Cool on the counter for an hour. Refrigerate and cool completely before running a knife around the edges and removing from the pan.
