True Friendship, that is Why: Friendship Poetry

Poetry time is here again,
as a group we've chosen a theme.
Some are easier, some are hard.
But Friendship? That's a dream.
 
I've written about this subject before.
But never, I think, in rhyme.
Then again, I actually could have,
Forget things all the time.
 
Either way, for this month,
writing of friendship is my chore.
Reading is all you have to do,
I couldn't ask for more. 






True Friendship, that is Why
        
Friendship's taken a turn these days,
reevaluated them of late,
It's good to just remind ourselves,
whoever's left, they really rate.
 
It's not that we have many less
friends in our lives, it's true.
It's just that who we call our friends,
no longer everyone we ever knew.
 
The circle's tighter now-a-days,
about that, there's good and bad.
I will tell you this, for sure,
those left, the best friends to be had.
 
Like this situation I admit,
happened many years ago.
Christmas time at a busy mall,
parking lot packed, and full of snow.
 
Dinner time, I called my friend 
and she could immediately tell,
just by the sound of my voice that day,
that things really were not well.

"I'm at the mall," I told her,
"and I've searched near and far.
Been out here for an hour I swear,
and cannot find my car."

She drove right down to meet me,
giving her dinner not a thought.
Got out and had me take her,
to what I thought had been my spot.
 
"Not there" she said to panicked me,
though I'd already told her so. 
In this same lot I'd had my mother's car
stolen, something she'd already know.

Up and down we searched each aisle,
freezing, tired, and with less ease.
Until she looked at my hand and said,
"Honey, those are not your keys."

It dawned on me with quite a jolt,
red faced, told what I'd done.
My car was in the shop being fixed,
I was there in their loaner one.
 
"Just wait till word gets out," I thought.
I'd never live this down. 
I'd be a laughing stock for sure.
May even have to leave town.

Once we found that loaner car,
she seemed to read my mind.
Before I started out for home,
she said these words, so kind:

"This never happened is what I'll say,"
spoken looking me in the eye.
And I knew that without question then,
true friendship . . . that is why.

Crockpot Hash Brown Soup

NOTE: I developed this recipe to be meatless, but you can easily add cooked chopped ham while cooking, if desired.
 
Ingredients: 
4 cups vegetable broth
1/2 cup white wine
1 can (10.5 oz) cream of potato soup
3/4 tsp salt
1/4 tsp pepper
1/4 tsp dried dill
3 green onions, chopped
1 tsp chopped pimentos, drain and pat dry
1 bag (26 oz) frozen shredded hash browns
1 cup light sour cream
3/4 cup reduced fat shredded sharp cheddar cheese
 
OPT: crispy fried onions for garnish
 
Directions:
*Spray a slow cooker with nonstick spray. Turn on to low.
*Whisk together the vegetable broth, white wine, salt, pepper and dill in the slow cooker. Add the green onions, pimentos and frozen hash browns. Mix.
*Cover the slow cooker and allow to cook for 4 hours, stirring now and then. Raise the heat to high and cook for 1/2 hour.
*Add the sour cream and cheese. Mix and allow to cook for another 1/2 hour. 
*OPT: sprinkle with crispy fried onions for serving.
