Party Matters: Secret Subject Swap

Welcome to a Secret Subject Swap. This month 3 brave bloggers picked a secret subject for someone else and were assigned a secret subject to interpret in their own style. My subject is: This country has been through a lot in the last few years. What is one thing that you think is the worst that has happened and why, and one thing that gives you hope for the future?

Under normal circumstances, this question would be overwhelming. I mean, to say this country has been through a lot doesn't do justice to the level of damage done here. Number one has to be the deaths, many senseless, from Covid. Beyond that is the complete chaos, the loss of any moral compass, the manipulation of our court system, the lying, cheating, stealing. . . And as each day finds us hitting a new low, yes, trying to choose just one instance would be overwhelming. 
 
But through the past few years, I've addressed a lot of what has been going on. I've talked about the deep depths to which the republican party has fallen (and continues to fall) and my frustration at the lack of definitive action by the democratic party. I've made the case for the democrats effectively being enablers through their hand wringing and pearl clutching instead of using the tools in their arsenal to staunch some of the blood flow. 

In order to refrain from making the same points over and over again, I'm going to tell you that honestly, what I think is one of the worst things that has happened is the loss of the republican party.

I'm not conservative in my beliefs in general, but I value a conservative voice in our politics. I think one of the healthiest things our democracy has benefited from is our two party system. It is a system of checks and balances, one that requires open minds, a platform for multiple views, an ability to negotiate, and the respect for opposing views and those who have them, productive discourse.
 
And friendships on both sides of the aisle. 
 
Politicians able to leave the debate on the floor and share a dinner or watching a game together, buddies with a mutual respect and in many instances, genuine friendships.

All of that is gone. And this is a profound loss. It was all necessary for a functioning democratic government. But there is no longer a viable republican party. There is only carnage, a battlefield of lies (even those that result in death are continuing to be disseminated), gerrymandering, changing of rules, bigotry, and hatred. The republican party no longer exists. And those true conservatives out there, the voices we desperately need to hear, are either leaving politics or being voted out.

We need, yes, need, a viable, rational conservative party in this country.

You probably think that the one thing that gives me hope is the midterms. You'd be wrong. Even though the results of the midterms do show that there are many people in this country who will not (or will no longer) align themselves with a party of lies, death, cheating, bigotry and deceit, too many of those elections were won by far right candidates with nothing to offer but robotic recitation of the party line. And of the rest, too many were far too close. 
 
What I once thought was a small, maybe 10% of the population, is now . . . still . . . despite everything that has happened, more like 45% of us. So no, sitting there with my heart in my throat through the midterms is not what gives me hope.
 
What gives me hope is our youth. Yes, there are young vehement Christian nationalists, Nazis, haters, but as opposed to the older generation, I see far more good, acceptance, rationality in our youth. I see they espouse less bigotry, accept their black and brown, LGBTQ+, Jewish and Muslim, disabled and mentally challenged societal brothers and sisters. Science matters, marijuana has healing properties, clean air and water take precedence over greed.

I grew up hearing, from my grandparents, my parents, and even have said it myself, that we hope to create a world, a country, a life, where our children have it better than we did.

We have failed. Dismally. Embarrassingly.
 
We now are in the position of looking to our children to save our planet, our society, our country.

And they have given me reason to hope that they will.

Apple Cinnamon Buddy Snacks

Printable Recipe

Ingredients:
6 cup Apple Chex cereal
4 cups Cinnamon Chex cereal
1/2 stick butter, softened
1/2 cup cookie butter (speculoos)
1/4 cup caramel baking bits
1 cup cream cheese baking chips
2 cups powdered sugar
3/4 tsp apple pie seasoning

Directions:
*Mix together the Apple Chex and the Cinnamon Chex. Set aside.
*Place the butter, cookie butter, caramel baking bits and cream cheese flavored baking chips into a large bowl. Microwave for 40 seconds. Stir. Continue to microwave and stir at 20 second intervals until the butter, cookie butter, and cream cheese baking bits are completely smooth (the caramel baking bits will be coated but not melted).
*Add the cereals to the bowl and gently stir to coat. Pour into a large sealable plastic storage bag.
*Mix together the powdered sugar and apple pie seasoning, add to the bag with the cereal, seal, and gently shake the beg to coat all of the cereal with the powdered sugar.
*Spread out onto a large piece of parchment paper for about 30 minutes. Store in a sealed container at room temperature.

Tailgate With Us

The Game Plan:
For me, there’s nothing more fun about tailgating than the friends. Yes, I’ve already admitted that I mostly participate in wimpgating (ie: tailgating from my couch) but I still enjoy the friends and the food and the fun . . . and yes, even the game. Today I’ve come up with a whole new way to tailgate from home, virtual tailgating. I’m a genius, I know.

For this sandwich, I make a quick and simple marinade for the glaze:

Glazed Kielbasa Sandwich Ingredients

I slice the Kielbasa along with onions and peppers and, once the marinade has cooled, place it into a re-sealable bag with the meat and veggies. This is a great way to transport it if you’re tailgating away from home.

Once I’m ready to cook, I skewer the Kielbasa and veggies. You can see from the picture of the sandwich up above that when I’m home I use metal skewers. If you’re grilling away from home, the easiest way is to use wooden skewers, then throw them out when you’re done. Wooden skewers need to soak in water before using so they don’t burn on the grill. Put them in water in another re-sealable bag and just put them into your cooler until you’re ready to cook. Then just toast the rolls, grill the meat and veggies, remove from the skewers and serve.

Glazed Kielbasa Sandwiches

Ingredients:
1# Kielbasa, I use a packaged cooked beef kielbasa
½ onion
1 green pepper
1 cup Apricot jam
2 TBSP balsamic vinegar
1 tsp minced garlic
1 TBSP sweet red chili sauce
½ tsp sriracha hot chili sauce
6 Hoagie rolls
 
Directions:
*Slice the kielbasa, onion and pepper into bite sized pieces. Place into a gallon sized re-sealable bag.
*Place the jam, balsamic, garlic and both chili sauces in a microwave safe bowl. Microwave for one minute, then whisk together. Allow to cool.
*Pour the sauce into the bag with the meat and vegetables and manipulate to be sure all ingredients are in the marinade. Place in fridge for a few hours up to a day. Turn the bag every now and then.
*If you’re using wood skewers, soak them in cold water for 2 hours. For tailgating you can place them into a re-sealable bag with water and place them in your cooler.
*Grease your grill grate with non-stick spray while the grill is still cold and turned off.
*Heat your grill to medium heat.
*Thread the meat and vegetables onto the skewers.
* Grill the skewers for about 5 minutes, turn and grill another 5 minutes. Don’t touch the skewer, carefully remove meat and vegetables with a utensil. You can also grill the hoagie rolls, if desired.

WimpGating

What do you do when you love the food and the company and even some of the games but not so much the cold? Wimpgate, of course.

AKA: Tailgating for sissies (and proud of it).

I’m not a sports fan but I AM a team fan. Where my family will watch most any sport any time, I only watch if one of MY teams is playing.

Now I’m not going to tell you that I haven’t tailgated before. I have, just not often. I attended a college game or two but just between you and I? I slept through most of the games. I mean, Saturday morning? Bad timing, dude. Friday nights (which lasted until Saturday morning) were busy times. And Saturday morning (which lasted until Saturday afternoon, and sometimes even evening) were for sleeping.

I’ve been to a few Pro games too, but early in the season. There’s the whole “standing outside eating in the freezing cold” thing that I just don’t get. Once my nose goes numb, my ears burn and my eyes are tearing, I’m out. The only time I want to be outside in the cold is when I’m skiing down a mountain.

Wimp, I know.

I do have a lot of really fun tailgating memories. There’s an outdoor amphitheater back home that had the best concerts throughout the summer. I went quite a bit. Now that’s a situation just screaming for tailgating, a warm summer evening being the key factor.

BUT, the other aspects of tailgating have me hooked: the food and the party. And now that I have boys in college, I have more teams to call “mine”.

And if my guests want the real feel of tailgating? I’d be more than happy to send them out to the driveway to eat. I’ll be here on the couch, tv on and fire roaring in the fireplace, scanning the fans in the bleachers for a glimpse of my boys. Wonder what they’re eating . . .

Raspberry Glazed Steak Rollups with Lemon Yogurt Sauce

Ingredients:
2# flank steak
1 cup seedless raspberry jam
1 TBSP raspberry flavored hard lemonade
1 tsp minced garlic
2 TBSP soy sauce

1 cup Lemon flavored Greek Yogurt
3 TBSP honey
1/2 tsp lemon zest

8 tortillas
OPT garnishes: I chose shaved carrots and roasted red pepper
 
Directions:
*In a microwave safe bowl, heat the raspberry jam for 1 minute. Whisk in the hard lemonade, garlic and soy sauce. Set aside to cool.
*Slice the flank steak, against the grain, into thin slices. Place into a gallon sized re-sealable bag.
*Pour the sauce into the bag and manipulate to be sure all of the meat is coated. Place in fridge for a few hours up to a day. Turn the bag every now and then.
NOTE: An optional way to cook this without skewers is to place the flank steak into the gallon bag with the marinade without slicing it. Cook the steak (it'll take more than 2 - 5 minutes per side) on the grill, let rest, slice and place into tortilla shells.

*Whisk the yogurt, honey and lemon zest and put into a container.
NOTE: I wash out empty ketchup bottles and save them for this purpose. I put the sauce in them and put them into a fridge or cooler, making it easy to drizzle the sauce.
*If you're using wood skewers, soak them in cold water for 2 hours. For tailgating you can place them into a re-sealable bag with water and place them in your cooler.
*Grease your grill grate with non-stick spray while the grill is still cold and turned off.
*Heat your grill to medium heat.
*Thread the meat onto skewers, if you're using this method.
*Grill the skewers for about 2 - 5 minutes, turn and grill another 2 - 5 minutes. Don't touch the skewer, carefully remove meat with a utensil.
*Place onto tortilla shells with your favorite garnish. Drizzle with the lemon yogurt sauce, roll up and slice to serve.
