The Evolution of Back to School

I'm back again this month with another poetry post. I've teamed up with some friends and, based on an agreed on theme, put my feelings into prose. 

This is the part when I usually apologize, fairly profusely, for the torture you'll withstand if you continue to read. 

Not today. I actually like this poem. It's not deep or thoughtful, the US Poet Laureate has nothing to fear from me, but its fun and quite accurately reflects my evolution in terms of attitude towards the subject.

The Evolution of Back to School
Summer's end.
Back to school I'd send,
my kids I lend.
Now my nerves could mend.

So I'd wave bye-bye,
with a smile not a sigh.
They may whine and cry,
but my eyes were dry.
 
Champagne brunch,
with the girls I'd lunch,
happily sip and much,
without our bunch.

All alone I'd shop,
out of town I could hop,
or on the couch I'd flop,
please, don't let it stop. 

I could take a nap,
or sing and clap,
dance and tap,
pop all of the bubble wrap.

Oh, I'd make a new treat,
without interruption, a feat!
And when done, take a seat,
A taste I could actually eat.

But wait! what's this,
destroying my bliss?
No! Boo. Hiss.
My kids I now miss.

Now I wave bye-bye,

Distance college won the duel.
That's just not cool.
Hey, back to school,
when'd you get so cruel?

Apple Pie Bread

Ingredients:
4 TBSP sugar
1 tsp cinnamon

2 medium apple of your choice
3 TBSP butter
2 TBSP brown sugar
1/2 tsp cinnamon 
3 tsp apple juice

6 soft caramel candies
2 3/4 cups flour
1 cup sugar
1 TBSP baking powder
1 tsp salt
1 tsp apple pie seasoning
1 egg
1/4 cup oil 

1 cup milk
1/4 cup applesauce 
1/4 cup finely chopped walnuts

Directions:
*Mix together the 4 TBSP sugar and 1 tsp cinnamon. Set aside.
*Place the caramel candies in the fridge. Once they've hardened a bit, chop, coat with a little flour and set aside.
*Peel, core and chop the apples. Melt the butter in a saute pan. Add the apples, 2 TBSP brown sugar, 1/2 tsp cinnamon and apple juice. Cook until the apples are soft, then remove from heat.
*Preheat oven to 350 degrees. Grease a loaf pan. Sprinkle about 3/4 of the sugar/cinnamon mix into the bottom and up the sides of the pan.
*Whisk together the flour, 1 cup sugar, baking powder, salt and apple pie seasoning.
*In a separate bowl, whisk the egg. Whisk in the oil and milk. Mixing just until incorporated, mix in the applesauce, and cooked apples with all of the liquid in the saute pan. 
*Mixing just until incorporated, add the dry ingredients then finally the caramels and walnuts.
*Pour into the prepared pan. Sprinkle the remaining sugar/cinnamon mixture over the top.
*Bake for 55 to 65 minutes or until the center of the top springs back to the touch. Run a knife around the edges, then allow to sit for 15 minutes before removing from pan.

  3. Recipe looks great and I'm totally with you on the poem. My boys are done with school, married and moved away. I sure do miss picking them up from school, play dates, sports and all the other headaches.

Enjoyed your poem...and thought back to when my now 50 year old son started the first grade...he'd already been in a preschool at our church for a couple of years so having him gone during the day wasn't new. However, I knew going to public school would be totally different, so watching him go up the steps of the bus was heart wrenching. I knew he'd be growing away from me for years to come. Life as he and I knew it had changed forever. Where's my kleenex?

  5. The poem is fun! I enjoyed reading it and was right with you til the end when you missed them :)
    But I still have grown children at home that came back after college so I'm still waiting for those empty nest days. Love the apple bread, definitely aim to try it!
