Inevitable Inevitability: Use Your Words

Today’s post is a monthly writing challenge. If you’re new here, this is how it works: participating bloggers picked 4 – 6 words or short phrases for someone else to craft into a post. All words must be used at least once. All of the posts will be unique as each writer has received their own set of words. That’s the challenge, here’s a fun twist; no one who’s participating knows who got their words and in what direction the recipient will take them. Until now.

I was going to make it stop.  
 
I had made an executive decision. It was a risky venture, but it had its base in love. 
 
Let me just say here that I'd made executive decisions before. Many, copious, countless, innumerable decisions, bless my executive heart. They didn't always go well, as you may have guessed. It's my fault, I'd made a mistake, raised them to think they had choices. My bad.
 
This time I was determined. I'd try everything. I was flying by the seat of my pants, throwing spaghetti at the wall to see what would stick (and, believe me, if throwing actual spaghetti had a prayer of working, I would have done that as well). I wasn't just relying on the decision alone, hell no, I was calling in the reinforcements. There would be an all out campaign involving reasoning, begging, endless persistence, sleep deprivation (OK, maybe not that one, but you get the idea), and yes {{sigh}} I was not ashamed to resort to bribery.

Starting with food, of course. I had brought out the hit list of favorite recipes, like Baked Hot Wings, Baby Backs, Fiery Shrimp, and even Crusted Prime Rib. You read that right, I was at the Prime Rib level of desperate (yes, that's a thing). And there were some new recipes to share too, ones I'd developed while he was gone, spotlighting his favorites, like marrying his love for THE Best Pumpkin Pie with his love for coffee, resulting in my Espresso Pumpkin Pie.

But, as with pretty much all of my executive decisions when it comes to my stubborn, headstrong boys (who, admittedly are now actually adults) inevitability inevitably inevits (yeah, I may have just made that word up, but it fits, right?).


One week ago, I had depleted my repertoire of machinations (damn, I need to expand my supply of mom tactics) and the time had come. The ski mountains were calling. Well, as was work and responsibilities. My youngest packed up his car, some meals and supplies I'd put together for him, and once again headed to Colorado.
 
Yes, there were tears, and yes, I waited until he was gone (well, mostly). There may have been some shameless hanging onto his shirt as he dragged me with him towards the door, but no need to dwell on that. Now there's a lot of woeful looking at the empty room he'd inhabited, and the spot in the garage where I'd gotten used to seeing his car, and that forlorn looking (although that might just be me projecting) empty chair at the dinner table.
 
Each member of my family is a big presence in our home. Conversely, they leave a large whole when they're gone. But I don't want you to think that I'm spending each day focused on his absence. I in general, but especially in this era of Covid, am cognizant of, and actively appreciate, how very lucky I had been, not only to have had his presence at my table for Thanksgiving, but in this house for an entire month.
 
We are the Blessings. And I am counting mine.

Hint of Vanilla Everything Bagels

Ingredients:
3 tsp sesame seeds
3 tsp poppy seeds
2 1/4 tsp dried minced onion
2 tsp garlic salt
1/4 tsp Kosher salt

1 1/4 cups flour, divided
2 1/2 tsp baking powder, divided
1 tsp salt, divided
1 cup vanilla Greek yogurt
2 tsp butter, melted

Directions:
*Preheat oven to 375 degrees. Cover a baking sheet with parchment paper.
*Mix together the sesame seeds, poppy seeds, minced onion, garlic salt and Kosher salt. Set aside.
*Whisk 1/4 cup flour, 1/2 tsp baking powder and 1/4 tsp salt, then spread onto a kneading surface.
*In a large bowl, whisk together the remaining flour, baking powder and salt, then mix in the Greek yogurt. Turn out onto a kneading surface and knead for 5 minutes (will be sticky).
*Divide the dough into quarters and roll each quarter out to about a 9 inch log. Make each into a circle with a hollow center, press the ends to seal, and place on the prepared baking sheet
*Gently brush the tops of the bagels with the melted butter, then sprinkle with some of the seasoning. Store the remaining seasoning into a jar for use another time.
*Bake for about 25 minutes, the tops will be browned. Remove from the oven and allow to cool before serving.

Poetry time is here again,
seems the days just fly.
December's theme is Cat Herders,
{{deep sigh}}, I guess I'll try. 
 
At least the subject's something,
I know a lot about.
Never had any cats, of course,
toddlers qualify, no doubt.






Bring on the Felines

Had a little party,
for the kids and all their friends.
Started off quite well,
but that's not where it ends.

All the kids were five and six,
same ages as my boys.
Made sure to have games planned,
and plenty of fun toys.

Ten kids for the afternoon,
what could possibly go wrong?
Wait, that's not a slingshot,
I think it's . . .well . . . my thong?

Two in the back yard,
dueling with rakes. 
"Don't poke an eye out,"
I plead, "for goodness sakes."

Three throwing toys at 
the street from our windows.
How they've caused no accidents,
seems heaven only knows.
 
Three more in the bathroom,
I can hear the water run.
I don't even dare to look,
at what damage might be done.

And two are eating dirt I see,
they'll have a belly ache.
I know how to stop that one,
"here, have a cupcake."

Ooops, I made those cupcakes
using liqueur, Irish cream.
Meh, they'll sleep well tonight, 
(and have a crazy dream). 
 
"Just keep them all alive," I think,
my job here will be done.
Gotta be responsible (damn),
fight the urge to run.
 
"Impossible, you can't herd cats,"
that's what they always say.
But after herding ten young boys?
I'll take cats . . . any day!

Chocolate Irish Cream Cupcakes

Ingredients:
1 box chocolate cake mix
1 box chocolate instant pudding mix
1/2 cup canola oil
3/4 cup milk
1/4 cup Irish Cream liqueur
4 eggs
1 cup Irish Cream baking chips
1 tsp flour

1 package (8 oz) cream cheese, softened
3/4 stick butter, softened
3 cups powdered sugar
1/4 cup Irish Cream baking chips
about 3 TBSP Irish Cream liqueur

Directions:
*Preheat oven to 350 degrees. Line 18 cupcake cups with paper liners.
*Beat the cake mix, pudding mix, oil, milk, 1/4 cup Irish Cream liqueur, and eggs for 2 minutes. Dust 1 cup of the Irish Cream baking chips with flour. Gently mix into the batter.
*Scoop the batter into the cupcake liners and bake for 20 - 24 minutes, or until the center springs back to the touch. Cool completely.
*Place the remaining Irish Cream baking chips in a food processor or clean coffee grinder and pulse until they are fine crumbs.
*Beat the cream cheese and butter until smooth. Beat in the crushed Irish Cream baking chips. Add the powdered sugar and beat carefully to incorporate. Add as much of the remaining Irish Cream liqueur, 1 TBSP at a time, until it's a good piping consistency. Put into a piping bag or a gallon size plastic bag (snip the corner) and pipe onto the cooled cupcakes.

Shrimp and Crab Puffs

There is so much I love about party season, and so much I don't. I love the efforts made to get together and celebrate with everyone, relatives, friends, neighbors, co-workers and even acquaintances. It's a season filled with fun. But the main thing I don't like about it is that's it's all crammed into about a 6 week period. It makes it a season filled with stress too. So much cooking and baking and shopping and planning, from Thanksgiving through New Year's Eve, we do a year's worth of all of those things.

When it comes to celebrations, especially when I'm the host, there are a few things that are important to me. First, making sure that I do enough prep work ahead of time that I can join in the party. Second, I want people to eat and drink comfortably. If I can't set up enough table seating for a sit down dinner, or don't want that kind of a party, I want to serve foods people can pop in their mouths in one or two bites. Since I dislike trying to walk around balancing a plate, or trying to sit in a chair with one balanced on my lap, I don't serve foods you'd need a fork and knife for. My favorite is to set the food up in a central place, label each serving plate so guests know what's there, then let everyone grab single serving foods through the night (and I can mostly just add to the table now and then but spend most of the time joining in the fun).

So, for today's post I've come up with a new individual sized appetizer inspired (loosely) by a favorite dinner, shrimp scampi. I deliberately developed the recipe to be easy to make, utilizing refrigerator biscuits and canned baby shrimp and crabmeat. I do cook and bake from scratch quite a bit (like all of the homemade cookies I make and pass out over the holiday season), but I also take short cuts where I can and this time of year I do.

Start with gathering the ingredients:

Prepare the filling:

Separate each biscuit into thirds (I had butter flavored biscuits so that's what I used, but the buttermilk ones will work well too):

Place the filling into the center of all of the biscuit pieces:

Form a ball with the filling in the center. Brush the tops with the butter spread and they're ready for the oven:

Bake for 15 minutes, and they're done:

Note: to get a puffed up top, bake with the seam facing up, to get a more rounded top, bake with the seam down.

Shrimp and Crab Puffs

Printable Recipe

Ingredients:
1 can (4 oz) baby shrimp
1 can (6 oz) crabmeat
2 TBSP sour cream (I use light)
3 TBSP shredded cheddar cheese (I use reduced fat) 
1 can (8 count) refrigerator biscuits
3 tsp melted garlic and herb butter spread (can substitute 3 tsp melted butter with 1/8 tsp garlic powder) 
 
Directions:
*Grease the wells of mini muffin tins (you'll need 24). Preheat oven to 350 degrees.
*Drain the shrimp and crabmeat. Place on a paper towel and pat gently.
*Mix together the shrimp, crabmeat, sour cream and cheddar.
*Open the can of biscuits and, pulling apart the layers, divide each biscuit into thirds. 
*Place about a tablespoon shrimp and crab mixture into the center of each biscuit third. 
*Form each biscuit into a ball, making sure that the filling is inside and there are no tears in the biscuits. Place into the muffin tin wells. 
*Using a pastry brush, brush the tops of each ball with the melted butter spread, then bake for 15 minutes. Serve warm.
